This is a wonderful recipe. My husband wanted me to make a potatoe salad with red potatoes. He doesn't like sour cream so I put dijon mustard in place of sour cream. He also doesn't like cheese! I also added more bacon, and added chives, and red onion. I added pickles, and celery too. It was so good! We ate it hot last night, but today it is even better cold! I wish I could make it with sour cream, and cheese, but hubby won't let me!! So this is a whole different recipe, but very very yummy!

I made this the other night and it went over great. My daughter who is 3 hates potatos but she had seconds. I did have to alter the recipe due to the fact that i had no sour cream, I used Dill Pickel chip dip instead. Next time i will try it the way it was supose to be made but i think my way was pretty darn yummy.

I made this tonight for our last minute family BBQ dinner. I boiled some whole garlic cloves with the potatoes and when I mixed the potato salad together, I added a little garlic powder, paprika and used pepper jack cheese. (It's all about using what's ON HAND.) Using fresh cloves is KEY. I also used half regular mayo and half hot mayo. Just enough for our little family and darn tasty.

Fantastic!!! I did four stars b/c I followed so many of the suggestions of the other reviewers, but trust me, the end result was FIVE STARS. I cubed, then baked my potatoes (400 degrees for 30 min), after tossing them with olive oil, salt, paper, and lots of montreal steak seasoning. (I munched on quite a few of those, as they could be a recipe in themselves!) I also upped the bacon to 4 slices, omitted the onions (family preference), and doubled the cheese. We ate it chilled and it was so good. I can't wait for heated up leftovers tomorrow for lunch! I bet it will be even better. Thanks for a new summer favorite!

Kinda bland as is. Nice mild flavor AFTER adding a few dashes of celery seed, fresh parsley, garlic powder, paprika and two more pieces of crumbled bacon.

I was in charge of potato salad the 4th of July. My brother-in-law requested chunks of potato and nothing crunchy. This recipe is great. My only problem was deciding what size of red potatoes to use. I went with the larger ones because they have fewer "eyes". I peeled most of the potato, left out the red onion and chives and doubled the bacon. This potato salad is aso good when it's heated just a little. I like it better that way. I'll definitely make it again.

VERY yummy! I didn't quite measure my onion (used Vidalia) and chives, but I think I was close to the amount called for but maybe a little more. I did use about 2 slices of bacon, maybe more. Made it Friday, ate it Sunday. I loved it! Father-in-law said it tasted like potato salad - I guess that's a good endorsement.

Even though I tweaked this to our tastes, I'm rating this 5 stars because it's the perfect starter recipe. You can add more or less of whichever ingrediants you want to suit your taste. The basic idea is wonderful. Such a great change to the same old boring potato salad. Thanks so much for the idea. YUM!

This is an awesome recipe but you defintely need to use ALOT more bacon. I used about 6 or 7 strips. Also make sure to salt heavily or you will end up with a very bland salad. I love to warm it up before I eat...its wonderful

This was just the recipe I was looking for. My grocery store deli sells it and I fell in love. Cross between sour crean potato salad and a baked potatoe with cour crean, cheese, bacon & chives. this is a keeper!
