This smoky and savory enchilada sauce is flavored with dried Ancho chiles, garlic, oregano, and cumin in a beef broth and tomato paste base. Pour it all over your next batch of enchiladas.

Tomato sauce, water, and seasonings are thickened with browned flour. Chicken or beef stock could be substituted for the water to heighten flavor.

The pork shoulder roast, sometimes labeled as Boston butt, is a rich and flavorful cut that becomes very tender as it cooks. This pulled pork is slow cooked and then simmered on the stove with salsa and tomatoes. Serve with warm tortillas or hard taco shells.

Takes a while but well worth the wait. Ground beef, pork, veal and pork chops make this a hearty sauce that's a meal in itself.

Texas Hotdog Sauce

When I was small we would always stop and get hot dogs smothered in a flavorful meat sauce on the way to Gram's. Dad worked and experimented, and finally came up with a sauce that tasted just as good. Be sure to spread the hot dog rolls with mustard and top them off with chopped onion.

This recipe was given to me by a dear friend. It's perfect for a special occasion, and is as good as you'll get from any restaurant. The filets are topped with a mixture of liver pate (pate de foie gras) and mushrooms and wrapped with puff pastry and served with a red wine sauce!
