Cabbage, carrot and bell pepper are marinated in a light dressing, and tossed with fresh crumbled bacon just before serving. One of our favorite summer salads. To make it easy, I use a food processor for the shredding.

This is a memorable combination, especially when all warm and bubbly. There 's sugar for sweetness and vinegar for a bit of sour, and lots of cabbage and thinly sliced apples. Makes two generous servings.

Bacon is the star. It 's browned and crumbled and all the other ingredients are lightly sauteed in the bacon drippings - onion, garlic, vinegar, and shredded cabbage. Serve warm.

Shredded cabbage, carrots, mayonnaise, green onion and a bit of salt and pepper to finish. If you like you can add other ingredients, whatever you think will compliment and that you find in your pantry. Try a dash of curry powder, you might like it.
