I'm originally from NJ and have never had a real Italian calzone with an American invented cheese, being the cheddar. That being said I substituted the cheddar cheese for 8 oz low moisture mozzarella cheese and 8 oz of Italian Blend. I also added some oregano in addition to the basil. For the filling I just used sweet Italian sausage. Instead of pressing the seam shut with a fork roll the ends after you close the so that is kind of looks like a pizza crust, this pretty much takes away the possibility of the calzone leaking from missing an area with the fork. All in all it is a good recipe, just needed some tweaking.

This was good. The kids liked them well enough. Maybe a bit plain and I even used Italian sausage.

I've been using this recipe for a few years now and the kids love it! When I roll out my dough I cut it into 8 squares, fill them and fold the dough over. Each kid has their own calzone. They are so very tasty.

These are super easy to make and taste great. You can pretty much fill them with anything + cheese. I like to make 8 small ones. They're very fulfilling

These were great! I forgot the salt the first time, and somehow the were still pretty good. I made them again (with salt) and if you roll them out really thin, they make a lot and you still have a wonderful crust. I was told these were the best calzones the person had ever had!

Dough was tasty; although, pretty sticky to work with so I was generous with additional flour. I used 1 cup moz and 1/2 cup of cheddar and did everything else as written. I have to say 1 T of dried basil is entirely TOO much! I cannot believe no one mentioned this in other reviews. I would cut it back to a teaspoon or less - otherwise it is just too overpowering.

These came out delicious...next time I'll definitely at least double the ricotta cheese...I guess I am just used to calzones with a LOT of ricotta cheese in them.

Delicious! I added more flour to the dough because it was pretty goopy, but other than that I made the recipe exactly as written.

Wonderful dough that baked up nicely! I doubled the oil in the recipe since I didn't want to risk dry calzones. I filled the calzones with japanese style curry instead. Delicious when fresh~ Gets rather dry and chewy the next day.

i didnt make the dough this time. i didnt have enough time, so i bought a pre made ball of pizza dough from my grocery store. i used alot more cheese then called for. used about a pound of ricotta and a prolly 3/4 lb of mozz that i grated my self. i added an egg to the cheese mix. i didnt brush the calzones with anything before i baked them, but when they came out of the oven i brushed them with garlic butter and sprinkled with parm cheese. i made 3 large calzones. plain cheese, pepperoni, and ground beef w/ onions.

these were good...i made a few substitutions because i was trying to use up some odds and ends...ended up putting in carmelized onions, bacon, a little bit of chopped up left over chicken, garlic, basil, mozzarella, and ricotta...i'm anxious to try it as written...i like those ingredients too...just didn't have them on hand. and because i used about 2/3 whole wheat flour, i added a little more sugar.

Very good. I used mozz. cheese as others had suggested. Loved dipping instead of having the sauce inside.

This is a great recipe! I doubled the amount of mushrooms and used half cheddar, half mozzarella cheese. But I kept everything else the same. We used my homemade pizza sauce for dipping, and it was a complete, satisfying meal.

Sooooo good, I wish I could give this six stars! The dough recipe is fabulous. I have found that taking them out RIGHT when they turn golden brown is key, if you leave them in too long the calzones are harder to cut into ( but still delicious). They are also pretty big, so if you're just making this for two make sure you bring your appetite! Thank you for the awesome recipe!

We really enjoyed this recipe. I made 8 small calzones instead of 2 large ones because my children all like different things in theirs. I did ham/mozzarella/ricotta in some and added broccoli and mushrooms to others. They turned out really good.
