These cookies are so good! They end up having a precious pink colour from the mashed strawberries. You can substitute other berries, or a mixture of berries, if you wish.

This easy-to-follow recipe makes a lovely 9x13-inch dessert. The fruit is combined with lots of sugar and a smidgen of flour, and then it 's spooned into the bottom of the prepared baking dish. Just before popping it into the oven, a buttery, brown sugar and oat crumble is sprinkled on top.

Fresh strawberries are combined with brown sugar, egg whites and lemon juice, and whipped into a lovely pink froth. Whipped cream is carefully folded in to make a lovely light filling that is spooned into a homemade walnut crumb crust. A bit of reserved crumb mixture is sprinkled over the top, and then the pie is chilled for several hours before serving.
