Raspberry Salad Dressing II

"This is a smooth and creamy raspberry dressing. If you can find raspberry vinegar, use that instead."

INGREDIENTS

  • 1 cup plain yogurt
  • 1/2 cup raspberries
  • 1 tablespoon red wine vinegar
  • 2 teaspoons white sugar

DIRECTIONS

  1. In a blender, combine the yogurt, raspberries, vinegar and sugar. Blend until smooth and refrigerate until chilled.

This is out of this world good and a very nice change from ordinary dressings AND it's healthy! I changed it a bit though...I used a whole bag of frozen raspberries and raspberry balsamic vinegar, like you recommended. I put it over a salad that contained baby greens and fresh bananas, nectarines, strawberries, walnuts and goat cheese. It was a huge hit and I will make it again often...what a super springtime treat for luncheons!!! Many thanks for a healthful recipe.

This stuff is great! Besides the wonderful and surprising taste it is so beautiful! Spices up any salad in more ways then one!

It was good. I like the fact that it's a very healthy dressing in terms of fat and calories. I would make again.
