Raspberry Cheese Spread

INGREDIENTS

  • 4 ounces cream cheese, softened
  • 1 cup mayonnaise
  • 2 cups shredded mozzarella cheese
  • 8 ounces shredded Cheddar cheese
  • 3 green onions, finely chopped
  • 1 cup chopped pecans
  • 1/4 cup seedless raspberry preserves
  • Assorted crackers

DIRECTIONS

  1. In a small mixing bowl, beat the cream cheese and mayonnaise until blended. Beat in cheeses and onions. Stir in pecans. Spread into a plastic wrap-lined 9-in. round dish. Refrigerate until set, about 1 hour.
  2. Invert onto a serving plate; spread with preserves. Serve with crackers.

I prepared this recipe for my Christmas Brunch and received rave reviews! I should have expected it seeing it came from Taste of Home's sister magazine, Simple and Delicious. I made the recipe as direct expect I choose to use lighter versions of the mayo and cheeses. Remember to make it early in the day or the night before so the flavors can blend. I just put the preserves on right before serving. Truly, it was the talk of the party. No one expected raspberry and cheese to taste so well together, but it was delicious! While easy to prepare, I will be including this recipe in my tried and trusted collection.

I made this over a year ago at my cousins bridal shower and everyone loved it! I have another bridal shower to go to tomorrow and everyone has called asking me to bring this dish. It is very simple to make. Also if you're looking to cut fat I think it tastes better with low fat or fat free mayo.

I just made this recipe last night for a dinner party with friends. The combination of raspberry and cheese struck some of us as odd at first...but it is truly delicious! It is a wonderful combination of sweet and savory. It is an added bonus that the recipe is super simple!
