1 cup raisins
2 cups all-purpose flour, divided
2 cups packed brown sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
3/4 cup vegetable oil
4 eggs
3 cups grated carrots
FROSTING:
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
1 teaspoon orange juice
1 teaspoon vanilla extract
3 3/4 cups confectioners' sugar

DIRECTIONS
Toss raisins with 2 tablespoons flour; set aside. In a large mixing bowl, combine the brown sugar, baking powder, cinnamon, baking soda, salt and remaining flour. Add oil and eggs; beat well. Stir in carrots and reserved raisins.
Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake at 325 degrees F for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
For frosting, in a large mixing bowl, beat cream cheese and butter until smooth. Beat in orange juice and vanilla. Gradually add confectioners' sugar; beat until light and fluffy. Spread over cake. Store in the refrigerator.

I made this for my son's first birthday, and while I didn't have any (I don't like raisins), he loved it. Also, my mother-in-law would have gobbled up the whole thing. She said it was very good.

Great carrot cake! Plenty of sweet cream cheese icing too. My son devoured his piece in a few bites and loved it. I savored mine and really enjoyed this cake as well. Not spicy, nice mellow flavor. I couldn't even taste the orange in the icing when the cake was iced, so if you're apprehensive about using it, don't be, it was perfect icing for the cake. Thanks!

First time making a carrot cake. My husband and his friend loved it! Our daughter (almost 2) gobbled up a chunk as well! I had one problem..my frosting wasn't thick enough...I think I should have added more powdered sugar (my fault not the recipe) GREAT FLAVOR! SIMPLE DIRECTIONS! MOIST CAKE!!!! PERFECT!!!!!

Wow! I haven't had such good cake in such a long time! It was so moist and fresh, i ate half of it myself. My whole family loved it, it was easy to make. Definately to be an all time favorite.
