I thought this was an excellent recipe and I like to experiment with it too.I used different varieties of beans and/or seasonings and broths.

With all the great reviews I thought this would be so tasty. It was not in my opinion. I am sure the nutritional value is worth it, but it does lack flavor. I did make with one can of beans and that did seem like plenty.

Really good! Used 1/3 less Black Beans, though, so the kids wouldn't be overwhelmed. This is going on our menu rotation, for sure!

Wow this was soooo good!! The whole family loved it, even the kids. My husband wanted more, but it was all ready gone. I will be making this again real soon. The only thing I did different was I used only 1 can of beans, and it was the perfect amount.

I first tried this recipe a couple of years back and have made it several times. It is now one of my go-to recipes for several reasons: 1. Versatility. I have cooked this with and without broth, with and without cilantro and cayenne and have added ground turkey several times to make it a main dish. It is fantastic any way you do it. 2. This is a pantry meal. I generally have everything on hand to make this delicious, nutritious option. 3. It is fast and easy. Both the hubs and I work full time and having this recipe in my arsenal has made for several tasty dinners after a long day at work. I can't say enough good about this one.. eat it. You will love it!

I made this recipe twice. First as written, second, with a few changes. I used only one can of black beans the second time as two cans made the bean taste too overwhelming. I also added additional garlic and used tomato based chicken bullion. The family thought recipe as it was written was just okay. The second version received rave reviews! This recipe is a great basic starting point to tweak according to the specific tastes of your family.

This is the first recipe I've made using quinoa. I really love this recipe. I doubled the recipe but like some of the other posters I didn't use the amount of black beans it called for just because of preference. This would really lend itself to using a variety of other add ins which I plan to try. I only had chicken broth and I thought it gave a great taste.

Surprised my husband with a very flavorful vegan meal. It is also very filling. I made the mistake of thinking one onion would be too much and only used half an onion, I should have followed the recipe. If you want more flavor, you can also eat it with salsa on the side.
