Delicious and oh-so-healthy! I chopped up some spinach I had and added that in with the corn, just long enough to let it wilt a bit. Other cooked vegetables can be added to make the dish more colorful.

soooo good i'd be willing to say it's one of the best dishes i've ever had! i ate almost half the batch myself as soon as it was done (whoops). i followed the recipe exactly. what i might add next time is some fresh diced tomatoes & cubes of fresh avocado just thrown on top just before serving! i think i'll also cut up chicken and cook it with the garlic/onions...would add just some protein & would taste even more fantastic (might not be possible!)!

Thise was very easy and delicious! Some minor changes I made included a little more cumin and I replaced one can of the black beans with kidney beans for more color and flavor. I also added a whole can of corn and it didn't over do it at all (like I thought it might). I brought leftovers to work and had several people ask me for the recipe! This one is a keeper!

This was a hit. Easy to prepare, easy to make, easy to eat! No crazy ingredients necessary, and pretty affordable too! I followed the recipe exactly-ish: except I took everyone's advice and used one can of black beans instead of two. I will most definitely be making this one again!

This was really delicious. I made the recipe and added sauteed cherry tomatoes and a hot pepper from my garden. My husband loved it. I roasted the corn on the grill and it added to the flavor. Delicious!

This was so good. I am attempting to use all of the ingredients that I have in my house but never use. I have had half a bag of quinoa for a while so when I found this recipe I decided to give it a shot. I made the recipe exactly as is and...yum!!!

I love this recipe. Used chicken broth instead of water and added a some chopped Hatch Peppers and RoTel Tomatoes. Also just 1 can of beans. I could eat this every day!

This was very good. My kids did not enjoy it, but my husband and I devoured it. I used only 1 can of beans, used chicken broth, omitted the onion and cilantro (didn't have any) and added some lemon juice and oregano. Very versatile dish.

My first cooking experience with quinoa and we loved it! This is an easy, delicious recipe - I substituted chicken broth and used olive oil for browning the onions and garlic. Also, squirted in some fresh lime juice at the completion and topped with fresh tomatoes - yums!

i added a can of costco chicken breast - only becasue my hubby refuses to eat a totally vegetarian meal!! i would have prefered it without the chicken. the flavors were excellent. i served it with a plop of sour cream and shredded cheddar. it made so much that i ate it for lunch the rest of the week!!

Great, easy quinoa dish. I have never had quinoa before, and this is a great and simple introduction. I did not have cayenne pepper, but it turned out delicious nonetheless. It should probably be renamed to black beans and quinoa with the amount of black beans in the finished product. Still, wonderful and it makes a large amount, which is key for me to store and bring to work throughout the week.

I added fresh squeezed lime juice to this and it really made the dish. With lime, it gets a 5. I also added chopped squash since I happened to have it.

I liked this recipe but it had a funny taste; I used vegetable broth but had to add some water and tomato paste to calm down the pungent taste. Overall, it tastes good and refrigerates well. Also, 2 cans black beans would have been too much so I stuck to 1.

Really great recipe! I think it's easy to personalize to add according to your personal preferences. Was unexpectedly slightly sweet! Nice touch. With bolder seasonings, it would be a 5 star easy!

Very tasty. I added a red bell pepper and subbed chicken stock for the veggie stock, and served with sour cream and avocado. This made up our entire meal, so for us it made 4 meal-sized servings, not 10 side dish-sized servings. Will definitely make again, but might up the spices a bit - good blend of flavors, just not enough. I got quinoa in the bulk section of our local supermarket for $3.99/lb, and I needed less than 1/2 a pound, so it was very economical for us. Also, I only soaked the quinoa for about 3 minutes (just while I was getting the chicken stock ready), and it was perfectly cooked according to the recipe's directions - if I'd soaked it for an hour I would have had slop for dinner!
