This is a fabulous find. I served it as a side dish for dinner, and had the leftovers as a main dish for lunch the next day. It keeps in the fridge for days and even gets better. Great texture, great flavor. And so healthful! I love cilantro and garlic, so I doubled the amount of both. Fresh corn is in season, so I used fresh instead of frozen (just added it raw when corn was called for). For color, I recommend adding some diced red pepper when you are browning the onion, or just stir it in raw at the end. I will make this again and again. Excellent recipe, I loved it. I personally subbed out one can of the black beans for a can of pinto instead. I've seen people say they only used 1 can of beans instead of 2, but I really like beans and didn't find 2 cans excessive. Maybe using two different kinds helped.

I thought this would have more of an equal amount of black beans and quinoa, but it is mostly black beans with quinoa. I doubled the quinoa and cheyanne to give it a kick and added a few squeezes of lime. I omitted the oil and used cookings spray. I also used chicken broth because I prefer the flavor. Very good side dish for BBQ and mexican dishes.

Didn't have quinoa, so I used bulgar wheat. I used fresh corn off the cob-raw and had only a little cilantro in my garden so I added oregano and thyme. Also added fresh tomato chunks. This was fantastic. Used as a main dish meal and it felt so good and healthy! Delicious flavor!

Delicious. I even screwed up and opened a can of kidney beans so I used them and a can of black beans. This was tasty hot and cold. I put it on a green salad and loved it and I had it with a fresh tomato cut up on top with hot sauce. Very versatile dish and pretty fool proof.

Hooray! Absolutely love this recipe and have passed it on time and time again! We omit the cayenne and add powdered chipotle peppers instead! I also add a can of drained fire roasted tomatoes and sometimes cooked and shredded chicken breasts. Thank you for this fab recipe!

YUMMY YUMMY YUMMY!!!!!!! a total crowd pleaser! even my "anit-healthy food" husband asked me to make it AGAIN! i soaked the quinoa in the vegetable broth for about 15-20 minutes before i cooked it which helped it cook faster and made it softer! we also topped it with avocado which made it a very complete meal.

I love this. It's so healthy which makes it even better! The only changes I made were to use hot sauce (like Crystal or Tabasco) instead of the cayenne pepper, I added about a 1/2 cup of salsa, and the juice of half a lime. It's got a fresh taste. It's good hot or cold, as a dip with tortilla chips or stuffed in a Burrito. A real keeper!

Much better the second day, and as a filling for burritos. I tried to eat it hot with sour cream... like chili... and it was not so good. Good cold, in a wrap.

Delicious and oh-so-healthy! I chopped up some spinach I had and added that in with the corn, just long enough to let it wilt a bit. Other cooked vegetables can be added to make the dish more colorful.

soooo good i'd be willing to say it's one of the best dishes i've ever had! i ate almost half the batch myself as soon as it was done (whoops). i followed the recipe exactly. what i might add next time is some fresh diced tomatoes & cubes of fresh avocado just thrown on top just before serving! i think i'll also cut up chicken and cook it with the garlic/onions...would add just some protein & would taste even more fantastic (might not be possible!)!

Thise was very easy and delicious! Some minor changes I made included a little more cumin and I replaced one can of the black beans with kidney beans for more color and flavor. I also added a whole can of corn and it didn't over do it at all (like I thought it might). I brought leftovers to work and had several people ask me for the recipe! This one is a keeper!

This was a hit. Easy to prepare, easy to make, easy to eat! No crazy ingredients necessary, and pretty affordable too! I followed the recipe exactly-ish: except I took everyone's advice and used one can of black beans instead of two. I will most definitely be making this one again!

This was really delicious. I made the recipe and added sauteed cherry tomatoes and a hot pepper from my garden. My husband loved it. I roasted the corn on the grill and it added to the flavor. Delicious!
