Wow, I was really surprised with how good this was. I didn't have any fresh parsley or vegetable broth, so I used water and addded a bunch more spices including savory, time, celery seed, etc and a couple dashes of worcestershire sauce. I also added some chopped bell pepper in with the onions. I might add a bit more cayenne next time. I put a little sour cream on top - yum! Easy, cheap, healthy, vegetarian, and very filling.

This was my very first time with quinoa. I thought it turned out very good. A little too spicy for the kids so next time I'll put in less cayenne.

This recipe showed up just in time for my post Labor Day vow to eat healthy. The combination of the cayenne and fresh cilantro was delicious. I used red pepper flakes instead of cayenne, as I feel it's a little easier to control the heat and went a little easy on the pepper. You can always add more later. I didn't have vegetable broth, so used a small individual serving can of V-8 juice and added water to make up the rest of the liquid. The only other change was just one can of black beans. I found that to be plenty for me. I'll definitely make this again. This recipe lends itself to lots of changes with different vegetables, grains, etc.

Delicious. Made as is except for over-spicing w/ cayenne (you try to eyeball it and bam -- too much) and adding a handful of halved orange cherry tomatoes. My first rodeo with quinoa -- great stuff. Sweet, nutty flavor still shines through. Heavy rotation from here on out.

Keeper! My favorite thing about this recipe is that you can really change/substitute/omit ingredients and it will still turn out great. Like it better with (1) can of beans and used chx. broth and red onion instead. I don't find soaking quinoa necessary, but I definitely do rinse it.

I used this as stuffing for some spicy red peppers, topped w/ pepper-jack cheese. I used barley instead of quinoa (yum) and added 2 cans of drained Rotel tomatoes (yum) and only used one can of the beans. Enjoyed by all.

This was great, but agree with 'kaz' that the quinoa was a little lost in the dish. Finished the dish with juice from half a lime and served with a dollop of sour cream, diced avocado, chopped cilantro and the green parts of a bunch of green (spring) onions.

The reviews I read prior to preparing this gave me higher expectations than the meal delivered. I followed the recipe EXACTLY (which I seldom do). I really like Quinoa, but this was a strange combination and drowned out most, if not all, of the Quinoa's contribution to flavor. This reminds me a little of Cowboy Caviar except heated. I think I will stay with the Quinoa Side Dish recipe, also on this site.

I am giving this a 5 star based on my vegan's daughter review. She told me this one is a keeper so I will surely be making it for her again. I omitted the cilantro (her preference)and the red pepper (my preference). I thought it was tasty but the quinoa had a grayc color to it that kind of turned me off. It has been awhile since I made quinua but I don't recall it having that hue,

This is my 1st time eating Quinoa - I liked this recipe, but I liked it more about 3 hrs after it'd been cooked - the flavors really came out then. I used g.pepper and snow peas instead of corn and used only 1 can of black beans - Its a good recipe when you are looking for a change.

This recipe is amazing! Extremely healthy and keeps you full for a long time! My husband and I added some lime juice and ate it with some tortilla chips. We absolutely loved it!

Three letters: Y.U.M.!!! I have made this recipe without any changes twice this week and it is delicious! This was my first time making a dish with quinoa, and my whole family enjoyed this recipe and the nutty flavor the quinoa seems to add. It reheats well and we even like it cold. If the nutritional information is correct I counted out (10) 2/3 cup servings. This is a great recipe, goes well with chicken and beef, probably just about anything!
