MAKE IT A MAIN DISH! ADD SHRIMP! So Good! I made this as directed, but added 1 red bell pepper in with the onion, and 1 lb. of raw shrimp just before the black beans. I added 1/2 cup of water with the shrimp and put a cover on it until the shrimp turned pink, stiring a few times. SOOO DELICIOUS! I do not eat meat other then seafood, so I have tried a lot of shrimp recipes, and this one is the best, and also the healthiest! I will be making this ALL the time. It is my new favorite recipe, yeah, it is that good!

While this was very good, I didn't find it as impressive as I had hoped. It needed something... Its super easy and is good though, and my family really liked it, so I will keep it, but will be modifying it next time.

Great starter recipe. I added a squeeze of lime and a dab of sour cream to give it a kick. Next time I will throw whatever veggies I have on hand into the onion saute -- diced carrot, zucchini, bell pepper, etc. A bit more cayenne might be a good thing too. Overall, a healthy, hearty, quick, and tasty recipe.

This was the first time I had worked with Quinoa. One important thing to note, I did not see mentioned in the recipe, make sure you thoroughly wash the quinoa before you cook it to wash off the bitter coating. The only changes I made to this was I shaved the kernels off fresh ears of corn, and I added diced tomatoes. It was quite delicious. As I am discovering quinoa seems to takes on and absorbs the seasoning and flavors of the food it is cooked with very well. I really couldn't discern it's own individual flavor. It looks to be a very promising grain to work with.

Delicious. Used only 1/8 tsp cayenne so not too spicy for kids, but still had good flavor that we enjoyed. Kids liked it OK. Will share this recipe and make it again.

My husband and I loved it. Made minor modifications used different oil and added more spices and added raw corn. I love how the cayenne pepper gives it a kick.

Very yummy. I realized I was out of corn so I had to modify the recipe slightly. I threw a chopped carrot in with the onion and used chicken broth. We had leftovers and mixed in with chicken soup which was very good as well. This recipe will definately stay at the top of the pile.

Very easy, cheap, and healthy vegetarian option for weekday nights. Also it is easy clean up, which is nice. We put a small amount of light sour cream on top and it really helped. I think next time we will add red pepper. We will be making this again.

We thought this was just excellent. I did add a can of Rotel tomatoes with chiles (this will kick the heat up a bit more), and we squeezed lime juice on it before eating. A very healthy, tasty dish, economical, and it's going in the regular rotation. Just a note if you're unfamiliar with quinoa - be sure to RINSE THE QUINOA WITH WATER before putting it in the pot. Quinoa has a natural substance on it that acts as a repellant to birds and such, and it has a bitter taste to it. While it won't hurt you, it will adversely affect the flavor of the dish. Rinsing with water before you cook it removes this substance. While some brands may be pre-rinsed, others, like the brand we can get, are not.

it was ok. i made it exactly to the recipe. family didn't like it. i have been taking it to work for lunch so it doesn't go to waste. if i make it again i may try to soak the quinoa before cooking.

This is the first time I had quinoa. I love rice and beans, so figured I'd like this. It was wonderful. I had it for lunch yesterday and warmed the leftovers up for breakfast. I will definitely be making this again. I only used one can of black beans, and used chicken broth because I didn't have vegetable broth. Other than that, I made it as directed. SUPER! Nice introduction to quinoa.

Pretty good; nice nutty flavor. If you like heat, I'd recommend increasing the cayenne. (It didn't seem to stick around.) Keep an eye on it, too, so you don't run out of liquid.
