This was such a great recipe! I like to tweak recipes to my liking, so this is what I did: First, I washed and soaked my quinoa for an hour, drained and set aside. I fried my onions until they were just getting soft, then threw in my chopped garlic to fry. (I put the garlic in after so it didn't burn.) I also chopped up half a jalapeno pepper really tiny (about the same size chunks as I had the garlic) and fried that as well. I added my quinoa to the mixture and fried it for a little while to get all the flavors melding together. I then added in water (in place of vegetable broth) and one chicken bouillon cube. I added in my cumin,cayenne (just a touch of cayenne because I already had jalapenos for heat - I didn't add any pepper), and salt (for those who are bad at estimating salt, one level teaspoon is what I used). Then I stirred, covered, turned down the head and let it simmer for 15 minutes. I then added half a can of black beans and half a can of corn (I like equal parts of beans, corn, and quinoa on my spoon). Stirred and let it simmer for another 5-10. And last but not least, I chopped up my cilantro and mixed that into the dish. TA-DA! Deliciousness in my mouth!

Loved this recipe! I doubled it and did make some changes that pleased my New Mexican Family's taste...I doubled the cumin and instead of Cheyenne pepper, I added 2 Tbs. of red chili spice, 1 red bell pepper, 1 Tbs. of chili lime spice, 4 diced green chili peppers (2 with seeds and veins), and substituted chix broth for veggie broth. I also halved the amount of black beans, as I didn't want it to overwhelm the dish. I served this to my family as a "no meat" main dish, and THEY LOVED IT! I am attempting to change their diets without a lot of whining and this meal is definitely going to help me to do that. I don't think there is any veggie that you couldn't add to this dish to improve it!
