I have to say this is a real "keeper" Healthy AND delicious at the same time! My husband even loved it and he is a total carnivore. Thanks so much and please.....more recipes like this!

Excellent & nutritious recipe! In addition to the great stuff already it in, I DOUBLED the cayenne pepper, increased Cumin to 1 1/2 tsp, increased Quinoa to 1 cup, and added some fresh diced tomatoes & diced zucchini for extra veggies. Not only good for lunch or dinner, but as a nice warm breakfast helping too! Mmmm good!

This is an awesome side or meal....even my kids 3 and 5 loved it. Will be making again and again. I didn't change a thing and it was great!! Don't cut back on the black beans people!! It is perfect the way it is!!

Cilantro is best added just before eating or it loses its flavor so I leave it out during cooking. For variety I cut up a hot pepper, used mushrooms instead of corn, added cubed cooked chicken, used hot chili beans instead of black beans, used spiced black beans, it's pretty easy to vary. I'm always on the lookout for quinoa recipes and this is tasty and easy to make!

I realized at the last minute that my quinoa was no good. It was flaked quinoa for making hot cereal. So I substituted 3/4 cup of barley, browned it with/after browning the onion/garlic & used 2 cups of vegetable stock and cooked for about 35 minutes before adding the corn. I still do not know what quinoa tastes like, but this recipe works well with barley.

yum! Very light, healthy and delicious. My only qualm is that I would be unable to eat this as a main dish because it doesn't make me feel 100% satisfied...I like a bit of fat in my meals hahaha. But its great! WIll add to the regular daily menu!

My boyfriend and I loved this recipe. I followed it to spec... but it could have used more heat. Next time, I will add a little more cayenne pepper. Also, I served this with a salsa/sour cream sauce on the side in case it was too hot. This was a good combo! Thanks for the recipe!!!

I loved this, however, I did not find it very economical. The only quinoa available at our grocery store was $4.67 for a 14 oz. bag. This was great with the Key West Chicken on this site and sliced oranges.
