Very tasty. I added a red bell pepper and subbed chicken stock for the veggie stock, and served with sour cream and avocado. This made up our entire meal, so for us it made 4 meal-sized servings, not 10 side dish-sized servings. Will definitely make again, but might up the spices a bit - good blend of flavors, just not enough. I got quinoa in the bulk section of our local supermarket for $3.99/lb, and I needed less than 1/2 a pound, so it was very economical for us. Also, I only soaked the quinoa for about 3 minutes (just while I was getting the chicken stock ready), and it was perfectly cooked according to the recipe's directions - if I'd soaked it for an hour I would have had slop for dinner!

We really liked this recipe! I did add about half of a chopped red and orange pepper each for some color and to make it more of a main dish. I am looking forward to having the leftovers cold tommorow for lunch!

My kids loved this recipe. It is also extremely easy and versatile. I have used chickpeas in place of black beans since that is what I had on hand at the time. My son loves to use the leftovers to make meatless burritos.

Great flavor and easy to make! My 7 year old son loves it as well and he is EXTREMELY picky. I was surprised he even tried it! I only used one can of beans and it was more than enough.

Excellent recipe and excellent grain. I can see that it is going to be very versatile. I added chopped up tomatoes as the last ingredient before I put it on the table. Not necessary but did add an option.

This was my first try at cooking quinoa and this recipe was great! Easy, healthy, filling, flavorful and inexpensive. Like others, I only used 1 can of beans which was plenty. I added a tomato for color and added some lime juice which really worked well. I used chicken broth instead of veggie. I ended up using the whole can of broth (2 cups). I should've kept to the 1.5 cups the recipe recommended as the quinoa came out a bit mushy. Something I'll keep in mind for next time!

This was really good. Like others, I used only one can of black beans - two would have been way too much in my opinon. Should mention, I think it needs salted at the end, but otherwise very good! Thanks for the recipe!

I was pleasantly surprised at how tasty this dish was. When I make again I am going to try adding a chopped tomato, serrano pepper and fajita chicken. This is a great base recipe and will be fun to play around but is definitely good as is!

Needs more color if its going to be a main dish, has decent taste just needs some more color (tomatoes, peppers, etc.)Used hot sauce to give it a little extra flavor once it was in the bowl.

Quite a good recipe, although I would prefer a bit more spice and perhaps a little squeeze of lime. I also added some finely chopped orange bell pepper I happened to have in the refrigerator. I think it could stand up to maybe a half of a seeded jalapeno for kick.

Our first quinoa experience - and it was DELICIOUS. My 3-yr-old ate his whole bowl and he doesn't normally like things "mixed together". I admit that I added a couple things, but the recipe would truly be great as written... My changes: Only used 1 can beans. Added 1 chopped poblano, 1 chopped tomato, 1 TB chipotle en adobo sauce (from can), and 1/2 cup cooked chicken. Served with avocado and sour cream/yogurt mix.

This is delicious. The only change I made was used only one can of black beans instead of 2 (I am a huge fan of black beans, but 1 can was plenty). My 6 year declared that this recipe was "to die for"!

The only alteration I made was using olive oil in place of the vegetable oil. This is an incredible recipe; easy, fast, and the flavors and textures go so well together!

So yummy and wonderful texture! I might reduce the cilantro a bit (boyfriend is not a fan of it generally) and I might increase the cumin a tad next time I make it but even as is, it's so so good. I used only one 19 oz can of black beans and I felt it was enough and I used red quinoa which tastes the same as the normal kind but looks pretty in case you feel like a change.

This quinoa recipe is amazing!!! My fiance and I have made this countless times. Great flavor.....fresh ingredients...and healthy! A great meal to take for lunch or use as a side dish. It's so good, we've made 2 batches to last us the whole week. If you're new to quinoa....and like the ingredients listed...make this dish!

This was our first time having quinoa. I added 1tsp chili powder along with a can of rotel tomatoes. I also sauteed 2C shredded carrots with the onion and garlic. EXCELLENT!! I also used 1 can black beans like others suggested. I did not put corn as hubby does not like corn mixed in with his food. Will make again!!
