Very very good! Thank you for a new favourite! I found the recipe for Zesty Quinoa Salad first, so I sort of combined the two recipes. I added half a cup of quartered cherry tomatoes, the juice of one lime, and substituted crushed chili peppers in place of the cayenne. I also used no salt added canned corn, and didn't bother adding any salt. Otherwise I followed this recipe completely.

This was a hit with the whole family - a very satisfying entree. I did add some green onions, and used 1 can of black soy beans and 1 can of garbanzo beans in place of the 2 cans of black beans. I agree with the many other reviewers that a less bean/more quinoa ratio would be even better. Can't wait to make it again trying more alterations and variations!

Good recipe, only 2 minor chages, as other reviews have said, used only 1 can of black beans, 2 cans would be way too much. Also used chicken stock instead of vegetable. Had it as a side dish with hamburgers and was full afterward. It's good cold as well. I brought my leftovers for lunch anf wrapped the filling in tortillas.

This was great. I made it last minute as an additional side dish because we had more for dinner than I expected. This receipe is great as written, but versitile enough that you can add/swap whatever you like. Personally, I wouldn't change anything. I did use chicken broth for the veggie broth because that's all I had, and used one can of black beans (that's all I had on hand). Next time I will definately use two cans of beans just because we enjoy them. Thanks for the great receipe.

I cook once in a blue moon because I never have the patience for it...I tried this and it was so easy! And it tasted great! I love it - definitely making it again. The only change I made was use one can of beans...I think it would have been fine with two cans too. I just wanted fewer servings of it.

This was so delicious! Added diced red bell pepper, 1/2 can of black beans, and 1 can of corn. Topped with sliced avocado. My husband is now a quinoa lover!

My family loved it. It's very tasty, if not terribly interesting, and the inclusion of the cayenne definitely makes the dish. I, too, added only one can of black beans, and that seemed to be just the right amount. I also didn't use cilantro (having none on hand--this is an excellent "Augh, I have no fresh veggies" emergency dish), and it didn't seem to need it. ETA: also, this made more like 5 servings (as a main dish) than 10.

This recipe deserves more than five stars, for how great and versatile this quinoa dish is! It's a great spin off of the traditional rice and beans dish and goes great with most chicken dishes you can think of. The dish is somewhat bland (great for people who don't like spice, but if your like my family we like flavor but without burning our mouths), we remedied this by adding a touch more garlic and cilantro then called for and once paired with a flavorful chicken recipe is was great comfort food. The great thing about this comfort food is that people on a low carb diet, diabetic, or simply wanting to eat healthy (but tasty food) adults, teens, or children its a one stop wonder.

Loved it! We eat a lot of quinoa and I needed a new recipe to change things up. I used chicken broth (it was all I had) and only one can of beans (I think two would be overkill). Served it with BBQ chicken. Yum!
