This is my first try cooking with quinoa. I really liked this dish and am eager to try others. Thanks for the great recipe....loaded with protien and fiber.

We all loved this! We took the advice of others and added a can of drained diced tomatoes and some chopped orange peppers. We did not soak the quinoa and it cooked up just fine, but we prefer it to have a bit of texture instead of being mushy. Thanks for the recipe!

This recipe is great. I substituted a tablespoon of medium curry powder in the water instead of the vegitable stock to reduce the sodium. It was really good. I think next time I will also sub red pepper for the corn to make this a super healthy meal.

I love this recipe. I've made it a lot of times, and vary it somewhat each time. I've enjoyed it no matter how it has been made. Some modifications I've made on different occasions: Chicken Broth instead of Vegetable Broth or half of each. Added Water Chestnuts, and red and yellow peppers right at the end. Canned corn instead of frozen 1 can of black beans instead of two (in fact I've doubled all the other ingredients and still only used 1/2 the black beans) a splash of soy sauce (note: i've only done this on the occasions where i've used primarily veggie broth and not chicken broth) I once even used 1/3 couscous when i ran out of quinoa. No matter how you change this recipe you can't mess it up. healthful, and delicious every time.

This is a fantastic recipe - I've made it many times. I add shrimp, pineapple, and a few tablespoons of lime juice -- excellent variation on the original.

This is a delicious and healthy recipe! I added 1/4 of sliced avocado to my Quinoa and black bean salad just to add a little extra flavor.

This recipe is SOOOO good! I recently have gone pescatarian (vegetarian still eating seafood) and have been having a hard time finding some really good recipes for quinoa. On occasion to mix it up a little I wait to add cilantro and grape tomatoes until it has cooled and I even add some lime juice. You can also substitute other beans or even chickpeas. Thanks for this recipe!

I love black beans and rice, and this was very similiar. The only thing I added was a Sazon de Goya packet, just because I like that extra little mexican spice kick when I'm eating black beans.

This is a new favorite recipe for my family, with a few changes. I use only one can of black beans. Add one small jalapeno pepper, finely chopped and sauted with the onion and garlic. During the last 10 minutes of cooking, I add a red and green pepper, and fresh corn rather than frozen.

I don't like cilantro, so I cut it out; instead I added some chopped red bell pepper (at the same time as the black beans) for color. I also serve it with shredded cheddar cheese on top. Every time I bring it as a "covered dish," I get compliments and recipe requests.

I started making this recipe before I realized that I didn't have all the ingredients. I used one can of black beans and one can of pinto. I also used ground ginger instead of cumin. I didn't have any stock on hand, so I used water instead. In spite of all those modifications, it tasted great and was very filling. My husband, who is quite picky, said I could add it to our rotation of meals. Next time I'll try it according to the recipe.

Obviously, I liked this as I prepared this recipe for the second time. I adjusted the liquid to a 1:2 ratio and soaked the quinoa for ten minutes - as per the advise of many reviewers. This time I added drained tomatoes and red, green and yellow peppers. Even better!
