This is excellent. I havd been using quinoa with steel oats for a while but this is now my new fav. I didn't have corn so I replaced it with sauted mushrooms and it was just great. I will make this often.

I've made this a handful of times, and it's turned out great each time. I think it's good both hot and cold, but my young kids ONLY like it cold. I only use 1 can of black beans, as many have suggested. Otherwise, I keep it exactly the same!

This is the first time making quinoa and I had my reservations how this would taste. But it is great!! Packed full of flavor. I did not soak the quinoa and I don't think it needed to be soaked. Very good, thank you!

I seriously love this recipe. The first time I made it, though, I burned the quinoa (not good). But subsequent trials have been successful. The cumin with the fresh cilantro is awesome.

LOVED LOVED LOVED this! First time having quinoa and what a wonderful introduction! All of my kids loved it and my youngest who's 5 had 4ths he loved it so much! I did make two substitutions from the original recipe and that was chicken broth as that's what I had on hand. I don't think it would honestly change the flavor all that much either way. And I used olive oil instead of vegetable oil. This is a keeper and a new regular to our meal rotation!

Delicious! Added pine nuts half way through my 2nd bowl of it and it took it to a new level. First time I've had quinoa and it won't be the last! The onion seemed like a lot, but it wasn't. I added some ground flax seed.

Sooooo good. I doubled the cumin but otherwise stuck exactly to the recipe. I will difinitely make this again. It is a great "what shall we make for dinner" pantry menu.

I loved it, so did my husband, he just doesn't like as much cilantro as I do. I mixed red and white quinoa for more color, added red peppers and green onions and a zucchini. Will make again and again.

If you have never made Quinoa & are a little hesitant to try it....try this recipe! I have never made Quinoa (or even tasted it) prior to making this recipe. I have been seeing Quinoa in a lot more recipes lately so I decided to give it a go. I added a 1/2t more cumin as recommended. I also diced up a tomato & added it right before serving. It added a nice pop of color. This recipe is delicious cold or warm. It also makes A LOT so you will be lucky enough to have leftovers. I added shredded chicken to it the following day & turned it into a burrito filling for lunch the next day & it was a great hearty addition! I can't wait to make more! This recipe definitely earns the 5 stars.

Fantastic recipe. It was even a hit with my picky eater in the family! I used only one can of beans and chicken broth since I had that on hand. I served it with baked tortilla chips and grated cheese.

I added cheddar cheese at the end of the cooking process, and used chicken stock instead of vegetable stock. This was very tasty and was a very different texture than I'm used to - thanks for sharing.

This was amazing! Instead of frozen corn, I cut the kernels off of three cobs of fresh corn. The added crunch it gave the dish was out of this world. A keeper.

This is one of the best recipes I have tried in a long time!! It is great hot or cold and is fantastic as a leftover! The only change that I made was to use a can of corn instead of the frozen. Awesome!! Thanks for the submission.

This is a great dish. I added a little less cumin and a little taco seasoning in it's place. I also added two diced (pre-cooked) chicken breasts. I used one can of reduced sodium chicken broth instead of vegeatable broth to help flavor the quinoa, plus a little diced red pepper. It was excellent with cheese and sour cream on top. I think we're gonna use the leftovers for burritos!! Thanks for this healthy(well a bit less healthy thanks to my changes ;), delicious recipe! =)

I was so looking forward to making this. So many great reviews. I made it exactly as written, except I used chicken broth instead of vegetarian, and cut it in half for smaller family,which should should not have affected the dish It's a gloppy mess like library paste with no flavor I can't imagine how it got great reviews
