onion, finely chopped
1 (2 inch) piece
fresh ginger, finely chopped
finely chopped fresh mint
finely chopped fresh cilantro
sea salt and ground black pepper to taste
chopped blanched almonds, or more to taste
The cloves add an unexpected taste! I topped this with pecans, not almonds Great tasting dish that was easy to prepare!
I might make it again, but the next time with 1/2t of powdered ginger. The way it is now, ALL I could taste was ginger - I thought one 2-inch piece sounded like a lot . . . next time I will trust my instincts. Had to throw the whole thing out.
I stirred in lobster at the end and it was a hit!!!
Fun & easy way to spice up Quinoa. I served it with Coconut Chicken Korma and the flavors blended together quite nicely.
