Quick and Easy Pancit Recipe Reviews - Allrecipes.com (Pg. 15)

I just made this because my Filipina friend had brought it into work one day and I really liked it. Anyway she got me the noodles including "shiny noodles". I soaked these in warm water until soft and sauteed all the veggies in soy sauce. She told me to add celery to this and a fried egg which I did and it came out great! I added garlic powder instead of garlic because I had no garlic on hand(I really need to go shopping!). Next time I will add shrimp per my hubby. I made it a vegetarian dish this time only for 1 person and it made alot because I used a small amount of noodles but those babies really expand!!! Enjoy this recipe....it is a keeper!

My children LOVED this & gave it 5 stars. I gave it 4 because I thought it lacked a bit in flavor. We will be making this again with a few tweeks. Otherwise- it is a great base recipe! Thanks!

I have never had pancit or any other Filopino food before, so my comments should be directed to others that are being adventurous, not people familar with the dish. I followed the recipe exactly using rice sticks (which was the closest I could find to the right noodle). I think that mushrooms would have been a nice addition. It was really easy to make and had good flavor (I used reduced sodium soy sauce), but not as filling as I would have liked. It reminded me of lo mein with rice noodles. I ended up using half of a small head of cabbage and that seemed to be plenty. I thought that it was too much until adding the noodles, then it seemed like an appropriate amount. This is a good dish to try, but it won't be making it onto my family's list of favorites.

What a versatile recipe! This stuff is great on its own, though to make it better we add in extra noodles (soba), hoisin sauce and other vegetables such as red pepper slices and water chestnuts - maybe some extra chicken. This can be easily doubled for a crowd.

It was okay. It isn't very flavorful. I think I'd change it slightly. Was very easy to make though.
