I made it to original recepie minus the sour cream and it is always greaT! a fave among my family and friends.when its enchilada cassarole night, they always say "oooooh were gonna be full tonight!"^__^

Awesome recipe! To save cooking time, I mixed 2 large cans of Snow's canned diced chicken breast and mixed it with a couple dollops of sour cream, 1/4 cup of shredded cheese, a splash of the green chile sauce, and about a teaspoon of garlic salt. I didn't have corn tortillas on hand and used flour instead. I rolled them like normal enchiladas with seam-side down, side by side, in a 9x13 casserole dish. I poured the remaining sauce and topped with remaining cheese. Baked for about 30 minutes at 350 degrees. I will continue to make this dish and freeze ahead of time as my hands will be tied with a new baby on the way. In about an hour, you really have a yummy quick and easy green chile chicken enchilada casserole!!

I loved this recipe and so did my husband, sister in law and co-workers! I did change the recipe a bit; I used flour tortillas instead of corn, mixed dark and white chicken meat and didn't add the sour cream to bake but put it on top of the portions as well as cut tomatoes and red onions. Soo yummy!

Wonderful recipe. Didn't char the tortillas as that really is a pain. I followed the advice on mixing the sour cream with the enchilada sauce and it did help. I will be making this again soon :)

Great recipe for the family! I found this a wonderful solution for what to do with whole chicken fryers. (I hate having to cut up raw chickens since they're so messy.) Instead, I just boiled the whole chicken with a large chopped onion (just quartered) and about 2 tbsp powdered oregano, salt and pepper. After it was done and cooled a little, it easily came off the bone and had a great flavor. Layered as instructed and put in the oven. I bet this is easily adaptable to bulk cooking too! Thanks for the recipe!!! A+++!

I followed the recipe to a 'T,' and it was amazing. I had previously made a similar recipe out of Martha Stewart's Everyday Food that was not nearly as moist and yummy. This was excellent.

Delish! Modified some -- boiled the chicken, then simmered in Rotel, then assembled etc. Topped with chives -- also mixed the green chile sauce and sour cream before adding it in. Very tasty!

I used left over pork I had from the other night when I made Simple Carnitas in the crockpot. I though it was ok, my family ate it, and didn't complain, so its that's always a big plus.

This recipe was awesome!!! My husbnad loved it and could not wait to eat the leftovers (and he hates leftovers). I did not char the tortillas and it came out fine. I will probably add green chilis next time. I will definitly be making this again!

This recipe is FANTASTIC!!! Hubby loved it and has requested it on regular rotation. We diced the chicken and cooked it on the stovetop. Instead of sour cream and green chili sauce, we used cream of chicken and salsa verde sauce b/c this was all we had in the pantry. We added diced jalepanos for spice and it turned out awesome!!! We will be making this again and again!

Made this tonight for dinner. I took the advice of another reviewer and mixed the chicken, a packet of taco seasoning and the sour cream and it gave the casserole a bit of spicy zip.. not to much, just right. I didn't use all the enchilada sauce. I used all but about a cup of it. My husband had THREE servings of this! Which he almost never does. This is easy and very tasty, will definetly make this again! Thanks for the recipe.

YUM!! I put my chicken in the crock-pot this morning with water, some chicken bouillon cubes, big chunks of onion, whole cloves of garlic, and chunks of celery. Seasoned it with a little garlic salt, rosemary and black peppercorns. Came home and shredded the chicken and diced up some of the onion and mixed it with a little more seasoning. I did char the tortillas, and I didn't have any sour cream so I used some non fat plain yogurt, which worked well. It was REALLY good and looked so great. Give this recipe a try, you won't be disappointed!!

I boiled the chicken in water with some fresh garlic, I mixed the sour cream with the chicken and added taco seasoning (1/2 packet) to it to add flavor (and a little diced canned jalapeno). I will come back and re-review this recipe after I make it the next time cuz I followed some of the other reviews and mixed and matched them and although it tasted really good, it had a very weird consistency. Some of the tortillas were soupy, some were hard!

Very, very yummy! My picky son had two servings. I followed the recipe with the exception of not charring the tortillas and using colby/jack cheese. It turned out perfect and tasted just like my favorite sour cream chicken enchiladas from a mexican restaurant. This is a keeper!

Awesome! The best homemade enchiladas. I used a whole rotisserie chicken from Albertsons and took all the meat off and chopped it a bit. Everyone had seconds, even my 2 year old granddaughter. I took some for lunch the next day and they were great. I can't say enough about these.
