Like mentioned in earlier reviews, I add 1 can of cream of chicken soup as well as 1 clove crushed garlic to the soup. The 2 times I have made this, I used the meat from a rotisserie chicken and frozen noodles from the freezer section of the grocery store. It makes the whole house smell cozy when this is cooking. This will be a regular dinner at our house in the winter months.

This recipe was so easy for my first time making chicken noodle soup. I added fresh minced garlic, thyme and a pinch of poultry seasoning and sauteed all the veggies together. It puts store bought soup to shame. Thanks for sharing.

This is a very good soup. I followed the recipe to a T, except for the veggies. I added a little extra onion, carrots, and celery. Thanks for sharing, it was perfect when I felt a cold coming on!

Didn't have veggie broth-it's fine w/o. Added some garlic salt & cream of chicken soup. Cooked in crockpot and it was delicious! Sister said it was the best chicken noodle soup she has ever had!!

I made several adjustments to this recipes, hence the 4 star rating. I used an entire 48oz box of Swanson's MSG free low sodium chicken broth, and 2 Herb-ox msg free chicken boullion and 4 cups of water. I sauted the onions, celery, and carrots in some olive oil rather than the butter. I used a rotisserie chicken and picked off all the meat (except the breasts, I saved them for another meal this week) and just dumped that into the pot with the veggies and the broth. I let it come to a boil then let it simmer for about an hour. I didn't have whole bay leaves so I used someone else's tip from A/R and emptied a tea bag and added my bay leaf pieces and let that stew with everything. I removed it right before serving. I used egg noodles and cooked them in a seperate pot so they wouldn't get all soggy. I can't wait for leftovers for lunch and dinner!! Even the sick DBF liked it, though he only ate a few bites he said it was good. I didn't add any other spices except for the bay leaves. No salt, or pepper or the other spices the recipe called for. Didn't want DBF to not eat it because it was too spiced up.

thanks!!! We were both sick and this was a lifesaver!! So easy, and really tasty. The only thing I added was a can of cream of mushroom soup and a little extra veggie broth. We used alphabet pasta for the noodles. I loved it!

You really need to increase the amounts of veggies, noodles and chicken with this amount of broth unless you like a very thin soup. It was easily the best soup I've ever eaten! Served with pepperoni bread from this site for a quick (okay, not so quick re amount of chopping. 10 minutes? Not this kid..)delicious and filling meal 29/3/09 I froze half the soup, egg noodles and all and it was just as good as fresh. Noodles retained their shape and firmness.

This is a great soup recipe. To save yourself a step, cut up the chicken and throw it right in the broth/veggie mixture to cook. It only takes a few minutes and comes out very tender, plus it adds more chicken flavor to the soup.

This is a wonderfully delicious, easy homemade soup! I only made a few simple changes to suit my family's tastes: I added garlic to the onion and carrot to saute, and I also substituted thyme for oregano, but did not use as much because I find thyme stronger. I used regular rotini pasta (not egg noodles) because that is what I had in the cupboard, and that worked just as well. I just used leftover chicken in the fridge from fajitas the night before, and that worked perfectly. The only thing I would do differently next time is to use low-sodium chicken broth and taste it before adding any extra salt, as we found the soup to be slightly salty - but this may have just been the brand of stock I used. Overall, a great recipe that I am sure I will go back to many times!

I used this recipe as a base recipe for this: I bought a greek flavored rotisserie chicken, took all the meat off the bones, and then made a stock out of the bones by simmering them in water for about 30-45 minutes. I used all the meat in the soup, and also added a generous pinch of marjoram to compliment the generous pinches of oregano and basil. I don't really closely measure ingredients for soups (obviously), so I ended up using about 3 stocks of celery, 1/2 of a big yellow onion, maybe 1-1 1/2 cups chopped carrots, and 3-4 cloves chopped garlic. I didn't add noodles this time, but may in the future. I would agree that the vegetable broth is KEY. I will make this again and again!!
