With temps in the triple digits, I really wanted to make a nice, refreshing gazpacho. But it's not fresh tomato season yet. I decided to give this a try with a couple of changes due to pantry limitations, and it turned out surprisingly well. I used a 14 oz can of fire roasted crushed tomatoes and finished the rest with part of a bottle of strained tomatoes as I had no regular diced tomatoes. And I just blended all the tomatoes. I also didn't have a seedless cucumber, so I used a freshly-picked pickling cucumber that I de-seeded. It's very important, I think, to use high quality canned tomatoes. Muir Glen is my favorite brand.
