Directions

  1. Heat oil in large deep skillet on medium heat. Add chicken; cook 10 minutes or until chicken is cooked through, stirring frequently.
  2. Add spinach, rice, tomatoes, broth and water; mix well. Bring to boil. Reduce heat to low; cover. Simmer 5 minutes, stirring occasionally.
  3. Stir in the Parmesan cheese.

  • Variations:
  • Try using 1/2 cup dry white wine for 1/2 cup of the broth. Cover and refrigerate remaining broth for another use.
  • Or, prepare as directed, using Reduced Fat Parmesan Style Grated Topping for the grated parmesan cheese.

I really enjoyed this recipe - made it within 30 minutes and served with a side compliment of roasted vegetables. It's gluten-free - an added plus!!

This was really easy and tasted really good. For is, there was a bit too much liquid and the chicken broth was a bit to strong, we'll cut back on both and for sure make it again.

This recipe was so yummy! I made minor changes and I have some suggestions, I used a lemon-pepper marinade for my chicken breast and since my boyfriend and I are major cheese fanatics, I added an entire cup of shredded parmesan and used half the amount of tomatoes. I also used 2 cups of just chicken broth instead of the condensed broth plus water. Overall this was a delicious recipe and I will definitely be making this again.
