INGREDIENTS
1 2/3 cups frozen mixed vegetables, thawed
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 cup cubed cooked chicken
1 egg, beaten
1/2 cup milk
1 cup buttermilk biscuit dry mix

DIRECTIONS
In a bowl, combine vegetables, soup and chicken. Transfer to an ungreased 9-in. pie plate. In another bowl, combine egg, milk and biscuit mix just until moistened. Pour over chicken mixture. Bake at 400 degrees F for 30-35 minutes or until golden brown.

I changed the recipe slightly. I added cream of mushroom instead of the other soup and used soy milk instead of milk. I also used frozen peas and corn not thawed and it was fine not thawed first. I had cooked chicken and threw it in my food processor where it diced up the meat a little finer than if I had done it by hand. I liked it finer. I was suprised at how much I actually liked this quick recipe. It was really good. I used Bisquick for the breading. In fact, my husband who does not like chicken pot pie liked it and went back for seconds that evening. My son liked it also. Thank you for the recipe, I will do this recipe again definately.
