I've made this quick and colorful appetizer for many great dinner parties. Serve with fresh salsa, guacamole or sour cream as dipping sauces-- or by itself. Works great on a large scale as well. Thawed and drained frozen veggies may be substituted for canned. Look for the combination of corn, red pepper and black beans in the grocery store's frozen food section.

What could be more simple than spreading peanut butter on a tortilla and heating it in the skillet with a little butter? Your children will love these great snacks.

Wonderful change to a plain old quesadilla. Sweet, salty and barbecued! Use any type of firm red apple. Additional options: add barbecued chicken or chopped jalapeno peppers. Serve warm with sour cream, salsa, guacamole or all three.

Quesadillas on the BBQ

Quesadillas on the grill make for a quick and easy supper on a hot day. Cooked chicken and imitation crab are great substitutes for the shrimp, as well as any vegetables and cheese of your choice. Serve with a tossed salad and Mexican rice.

Here's a simple and delicious late-night (or anytime) snack. Peanut butter and apple slices are grilled between flour tortillas. Try it with bananas or other thinly sliced fruit.
