Fried corn sticks are a common appetizer here in Puerto Rico. Although time consuming, it is well worth the effort. Be sure to eat them immediately. I find that once the corn sticks have gone cold, they are about as tasty as cold French fries.

Quick cooking polenta is baked with Parmesan, basil and tomatoes for this colorful and flavorful sidedish. This baked polenta is a lovely way to show off tomatoes from the local farmers' market or your garden. It is a great side dish for grilled meat and vegetables.

This Arroz con Leche is the Cuban version of rice pudding. It's richer and sweeter than regular rice pudding. Being Cuban myself, I prefer this version of this delicious dessert to any other.
