My only problem was these ended up more like cookies and less flat like whoopie pies--hard to fill! Great flavors though.

Great! The only change I made in the recipe was to substitute 1 cup of vegetable shortening for the vegetable oil. Even though I know that vegetable oil helps to keep baked goods moist, I felt that the vegetable shortening gave them a better texture. My filling consisted of 2 cups confectioner's sugar, 1/2 cup shortening, 1 teaspoon vanilla extract. Then, I add warm water, one tablespoon at a time, until the filling reaches the consistency I want.

the best pumpkin cookie i've ever had. just the cookie along would be good just to have if your not into wanting all the calories that are in the filling.

Absolutely delcious! I made these for everyone in my company and they all absolutely loved them! I added a teaspoon extra cinnamon to mine because I love cinnamon...Turned out great!

I made these for Thanksgiving in order to have something different that was still very much in the feel of Thanksgiving food. These are very yummy and a pleasant surprise to people when they see and eat them for the first time. Suggestion is not to make them too big, (which is tempting!) as they are very rich. People were a little shy trying them the first time so I was cutting them in half. Next time I'll make them a little more along the lines of two bite sized. Perfect for fall, perfect for bake sales, everyone loved these whoopie pies!

I don't know what happened. I bake all the time. They tasted too doughy. Texture was off. Does 1 can of pumpkin = 1 1/2 cups of pumpkin puree. Maybe that's why the recipe was off.

Best pumpkin Gob I've ever made. I would recommend not making the cookies so big. I only got 7 complete sandwiches and they were a little overwhelming, BUT very tasty!

Quite good. I was hoping for a little stronger pumpkin taste. C'est la vie. If I make this recipe again I will be doubling the filling. It's jut not nearly enough.
