1 cup all-purpose flour
1/2 cup rolled oats
1/2 cup packed brown sugar
1/2 cup butter
2 cups pumpkin puree
1 (12 fluid ounce) can evaporated milk
2 egg whites
3/4 cup white sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 cup chopped walnuts
1/2 cup packed brown sugar
2 tablespoons butter
1 cup whipped cream (optional)

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Spray or grease one 9x13 inch pan.
Mix together the flour, oatmeal, brown sugar and butter or margarine. Press into pan; bake for 20 minutes or until golden brown.
In a large deep metal bowl, beat egg whites until soft peaks form.
Blend together the pumpkin, evaporated milk, egg whites, sugar, salt, cinnamon, ginger and clove. Pour custard into baked crust; bake for 30 minutes or until firm.
Mix together the chopped nuts, brown sugar and butter. Sprinkle topping on custard and bake additional 15 minutes. Remove from oven and allow to cool. Cut into squares and top with whipped cream if desired.

These squares are delicious. A bit hit around thanksgiving. I doubled the recipe and tried to cook in a 9X13 pan and it didn't work out to well. I had to cook anout 25 min longer than called for for the custard to set but by that time the outside was overcooked. This is a great recipe but next time I'll stick to single batches.

I made this for a baby shower and was bombarded with compliments and requests for the recipe. It is very flavorful and a great way to use fresh ingredients. A delicious salad!

These bars are super tasty. I didn't add nuts because I don't like them much. I also added vanilla to the pumpkin mixture. My advice would be not to refridgerate them because the crust gets extremely hard and it makes it difficult to get out of the pan. Once out of the fridge, though, they're fine. Thanks for the recipe.

Pretty good. I liked the idea of these, however they are much too bland. I double the amount of cinnamon and nutmeg and still thought they lacked something. The crust was very good - the topping a bit sparse for a 9x13 pan. I think I'll stick with pie in the future. Thanks for the idea though.

Check please…… you are going to think you just finished your dissert at a fancy restaurant when you make these pumpkin squares! My husband is in love with this recipe as am I. Please don't make any changes when trying this for the first time, absolutely none are needed! Thanks for the recipe!!!

This was so yummy! I had to use condensed milk instead of evaporated milk so I added less sugar. It was a great alternative to pumpkin pie!
