Sweetened condensed milk and custard mix distinguish this very creamy, no-bake pumpkin pie. And it 's a snap to make. Pumpkin puree, brown sugar, spices, custard mix and sweetened condensed milk are stirred up in a saucepan until everything is mingled. The filling is then poured into a pre-baked crust and chilled until ready to serve.

The crust for this savory pie is made in the food processor and rolls out beautifully. The cooked filling of pumpkin, potatoes, onions, and corn, is robust and nicely flavored with thyme, allspice, garlic and Monterey Jack cheese. The filling is piled into a pre-baked crust and given a half hour in the oven.

Pumpkin Custard Pie II

Heavy cream, candied ginger and a quarter-cup of cognac makes this an ambrosial pumpkin pie. The ginger and cognac perfume all the other ingredients, and the cream gives the filling a luscious, velvety texture. Everything is stirred up in a large mixing bowl and poured into a prepared crust. The pie emerges from the oven 30 minutes later, set and beautiful. Cool and serve with whipped cream.
