INGREDIENTS
1 (15 ounce) can solid pack pumpkin
1 (12 ounce) can evaporated milk
3/4 cup sugar
1/2 cup biscuit/baking mix
2 eggs, beaten
2 tablespoons butter or margarine, melted
2 1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla extract
whipped topping

DIRECTIONS
In a large bowl, combine the first eight ingredients. Transfer to a slow cooker coated with nonstick cooking spray. Cover and cook on low for 6-7 hours or until a thermometer reads 160 degrees F. Serve in bowls with whipped topping if desired.

Very tasty, just like pumpkin pie! I used 1% milk instead of evaporated milk and only left in the slow cooker for four hours and it was perfect. I will definitely make this again.

I followed the recipe exactly and when I checked it at four hours, it was already 180 degrees. It was also a lot thicker than I anticipated. The picture is very accurate. I think I'll make it again, but I might add some more milk next time. Remember to spray the slow cooker!!

Wow! This is fantastic! It was done much sooner than 6 hours but that was okay because the smell was making all of us hungry!

If you like pumpkin pie you will love this recipe. I had it at a fall outing served with real whipped topping and I could not wait to get home and make it for my family! Yummmmmm!

Excellent! As others stated, it was done in about 3 1/2 hours. I replaced the evaporated milk for whole milk and reduced the sugar to 1/2 cup and it was plenty sweet. Also I used maple sugar rather than white sugar. I served it cold with whipped cream! Delicious!

oh my gosh. simple, simple, simple. and sooooo good. All stuff I had in the cupboard. It was a cold, dark, damp, rainy day and I was craving "comfort food." Man did this fit the bill. The smell filled the house and I was dying to try it. Good thing it was done in 4 hours NOT the 6-7 it says. Even better cold the next day with ice cream. Have made it 3 times in the past week. Can't wait to serve it to guest, and it MIGHT even replace the pie at Thanksgiving!!!

Fabulous, absolutely fabulous!! It was just like pumpkin pie without crust. Mine was done after 3.5 hours though, so be careful about the time.

This was good. I expected it to be a tad better, but it was still pretty good. :) Definitely make sure to eat it with some cool whip!

My five year old always asks for pumpkin pie so I thought I would try this pudding and save on prep time and not make a crust. I wanted it ready prior to the 4 hours in the crock pot so I mixed all the ingredients together on the stove top and stirred until the temp reached 160. It came out great and my son was happy to have something so quick that tasted like the pumpkin pie he loves! I have not made this in a crock yet (but may in the future) so I can't say if the consistency was any different doing it my way or not but we were more then happy with the taste!
