A favorite! We took some other suggestions and added the whole can of pumpkin, an extra dash of pumpkin pie spice, vanilla, and subbed out the white flour for whole wheat white and old fashioned oats. I mixed the dry ingredients the night before and we made enough to freeze the leftovers. They were extra tasty with the honey butter found on this site too!

i added a little nutmeg and it was great! make into the shape of pumpkins and use gel icing to make scary faces :) a fun halloween treat

Oh. My. Gosh. These pancakes were the best ever. My picky husband and even pickier kids all loved them! I took the advice of another reviewer and added an extra tablespoon of brown sugar, as well as 1 t. vanilla. Trust me, you're going to love these!

I really liked these pancakes. While trying to make my money go farther, I occasionally make breakfast for dinner and was surprised that no one complained about this meal. I stuck to the recipe but did add more pumpkin (about 1/3 cup more) and doubled my spices. I made homemade honey butter to top them with and it was perfect. I will definitely be making these again very soon.

These pancakes were better then IHop!! We had them for dinner. I did follow one suggestion from another review and used a pancake mix. Was quick easy and kids were asking for them again at breakfast!!

Wonderful! I replaced 1/2 of the flour with whole wheat flour and added some ground flax seed. I then had to add some more milk to make the batter the right consistency. I doubled the cinnamon and they came out so fluffy and tasty!

Great recipe. I used soy in place of the milk and thinned the batter slightly with 2 tablespoons of water. I also replaced 1 tablespoon of oil with applesauce. It turned out perfect. All the kids at our house gobbled these up!

These pancakes were really delicious. I followed the recipe as it was written and like them a lot. I think next time I'll add more cinnamon, brown sugar and a splash of vanilla. My husband and 1 year old daughter really loved them though!

these were the tastiest pancakes i've ever had! by the time you add maple syrup on top they taste just like pumpkin pie. as other reviewers have suggested to NOT think the batter, i tried it exactly as is. i was very skeptical because it was so thick but as long as you let them cook for a decent time on each side, they turn out nice and fat and fluffy. i'd say if you're going to thin the batter do it very minimally. excellent recipe ruth - thanks!

Yum! My 6 and 2 year old girls gobbled these up. I made as directed except I swapped the all-purpose flour for whole wheat flour. If you top with a tiny sprinkling of cinnamon & sugar, syrup and if you are feeling really indulgent some whipped cream, you'll have quite the breakfast (or dinner) treat!

Wow, these were so good. I love anything with pumpkin in it. Instead of the allpice, cinnamon, and ginger, I added 3 teaspoons of pumpkin pie spice that I got from this site. I would actually be able to eat this year round!

These were really good. I liked them better without syrup than with and that is really saying something. I felt like I couldn't taste the pumpkin if I covered them with syrup, and I really liked the taste. They had a fluffy light texture even though they were a thicker pancake. I'll be making these again.

I made this over the weekend. They were good, but per other reviewers, I increased the pumpkin to a whole can and still thought the flavor was not quite strong enough (hence the 4 stars). Also increased all the spices and added pumpkin pie spice. Subbed half whole wheat flour and added nuts. My husband didn't want to try them at first, but ate 4!

Doubled the recipe so I had some to freeze and pull out later for a quick breakfast. I already have a delicious pumpkin pancake recipe but there is about 3x as much fat in it, so I was looking for something a little healthier. This has a minimal amount of fat yet still delivers big taste and a very fluffy pancake. I even used half whole wheat flour and they were still quite fluffy, while still being thick and hearty so that you don't need to eat as many. Loved it topped with applesauce! So glad I have a better-for-us yummy pumpkin pancake recipe now!
