I followed the recipe exactly, but substituted butter for shortening. The texture was good, cakey, like a pumpkin drop cookie should be. The flavor of the cookie itself was very bland, and may be helped by some extra cinnamon. I don't think the pumpkin to flour ratio could be changed without affecting the texture. With the icing, the cookies were much better, although they were still just good. I couldn't honestly say they were the best cookie ever, but I will make them again and tweak the recipe a little. They have a lot of potential, and the icing is great!
