These cookies are absolutely amazing!!! To make it a little more healthy I substituted with whole wheat flour, upped the pumpkin to 1.5 c., used 1/2c. brown sugar and 3/4 c. Splenda, and two egg whites. I didn't have any nutmeg so I substituted it with pumpkin spice, and it was delicious!!! I didn't use nuts this time, but I think I definitely will the next time--would be a great addition. This gets one big thumbs up!!!!
