My granchildren and I made these today as bars, using freshly cooked pumpkin. Moist and delicious. Easy enough that little children can "help." So popular we have more pumpkins baking so we'll have plenty of puree on hand. We plan to bake these again soon, and often.

They were very soft and I ended up calling them "muffin tops" instead of cookies. Everyone loved them.

Only used 1/2 cup of butter. Made into bars by baking at 350 in a greased 9x13 pan for 30 minutes. Delicious!

I did these as bars and had too much batter for my pan so I ended up doing some as muffins. I will make this again as a muffin. I reduced the margarine to 3/4 of a cup and also each of the sugars to 3/4 cup. I cut back the choc chips to 1/2 cup and will leave them out completely next time so that the pumpkin flavour is more dominent.

My husband and father are diabetic so I used splenda for the sugar and only 1 cup. I also used raisins instead of chocolate chips, only because our family prefers them. Both loved the cookies. For the rest of the family, I halved the sugar. These have become a new family fav. Thanks

I made this recipe the other day, in both cookies and bars! I definitely prefer the bars..the cookies are a bit too thin and cumbly for me..but the taste is absolutely WONDERFUL! I took a batch to work, and everyone loved it and begged me for the recipe! :) Thanks for sharing!! I made with fresh cooked pumpkin! :) Yummo! :)

I hate to admit that this is the first eh-review I had. I added pumpkin spice to create a flavor- I got the pumpkin flavor but the oats and flour overwhelmed it all. I was hoping for a bit more of a crunchy cookie- a CHIP if you will. I kept the second batch (I only have 2 cookie sheets) in twice as long and they still were mushy/uncooked feeling. I like batter so I was able to salvage some of it. Just not sure what went wrong :(

I love to make cookies and muffins, and have been baking for around 25+ years now. I would say that they taste like a bowl of oatmeal someone put pumpkin pie spice into, but not as tasty. Save your pumpkin for some other recipe, because this one misses the mark.
