I doubled the recipe and it was enough to make 3 nicely sized cheeseballs. I took one portion out before adding in the beef so that our vegetarian friends could have one too. This one had more of an issue holding its shape at first. So I put it in the freezer for a while, making sure not to freeze it completely. This helped hold the shape a lot.
It was a great appetizer for our pumpkin dinner, but it was a little bland. I was hesitant on adding in the raw onion (thinking it would be too potent) but it still was not flavorful enough. It is a good baseline recipe that I will use in the future, but I will experiment with spices next time.
