Perfectly Simple Pumpkin Cheesecake

Pumpkin cheesecake is not technically a pie, but it does have a crust and has become a Thanksgiving classic. And I've simplified its crust, too: Simply lay whole graham crackers in the pan, then spread melted butter and sugar over the crackers, and bake.

The cheesecake layer in this delicious pie is spread over a fabulous baked pecan crumble crust. The pumpkin layer, made from pumpkin puree, vanilla pudding, and whipped topping, is spooned over the cream cheese and topped with more whipped topping and chopped nuts.

When I was young we produced several ingredients for this longtime favorite on the farm. We raised pumpkins in our large vegetable garden, and made homemade butter and lots of sour cream from our dairy herd.

My mother gave this recipe to me, and I'm glad she gave it to me. I think it's better than regular pumpkin pie, it doesn't have a real strong pumpkin taste. It's great! My boyfriend doesn't like pumpkin pie but he sure likes this! Originally submitted to CakeRecipe.com.

Pumpkin Cheesecake Pie

Both the crust and the filling are super in this delicious pie. The crust is a tasty crumble of graham cracker, pecan and ginger. This lovely mixture is pressed into a 9-inch pie tin, and filled with a scrumptious pumpkin pie filling boasting cream cheese, brown sugar, cream, eggs, cinnamon, ginger, nutmeg and cloves. The pie is then baked and garnished with whipped cream and pecan halves.

I invented this recipe and entered it into a contest held at my college. The texture is light as a cloud, though it is quite rich. It is prepared with the convenience of a microwave!
