Pumpkin Burgers

"In our town, we have a pumpkin festival in late October and use pumpkins many different ways. This is a popular recipe for 'sandwich night' at our house."

Ingredients

  • 1 1/2 pounds ground beef
  • 1 medium onion, chopped
  • 1 (12 ounce) bottle chili sauce
  • 1 (10.75 ounce) can condensed tomato soup, undiluted
  • 1/2 cup canned or cooked pumpkin
  • 1 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon pepper
  • 6 hamburger buns, split

Directions

  1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the chili sauce, soup, pumpkin, salt, pumpkin pie spice and pepper. Bring to a boil. Reduce heat; cover and simmer for 1 hour. Serve on buns.
