I was a bit leary over the size of the recipie...but I had two 15oz cans of pumpkin to use, so I figured 'what the heck'. I brought a piece to my boyfriend, who had just gotten out of the shower. As soon as he had the bite in his mouth, he dropped to his knees in front of me on the bathroom floor and said, "I want you to stay with me for the rest of my life." =) I'll be using the recipe again, for sure! I think the original recipe calls for way too much sugar- I used 2 C lightly packed brown sugar, and 1 C Sugar in the Raw, substituted 1/2 C gingerbread yogurt and 1/2 C butter for the oil, and added 3T pumpkin pie spices, 1 T cinnamon, two pinches clove, and a pinch of nutmeg. The recipe baked quickly with 3 minutes to spare from the 1 hour mark. They were very dark brown on top, and at first I was afraid I had burnt them- but it's just a darker bread. The bread is *very* moist. I wouldn't use any more than 1 C of oil/butter substance if you use 30oz pumpkin puree. I made it in one 9x5" pan and a larger 9x11" pan. I will be taking some to my families' Thanksgiving....if we don't eat it all first!

Good basic pumpkin bread recipe! Made it as is and it was great! Cut back to make one loaf on next batch using applesauce for the oil, brown sugar, whole wheat flour, and added ginger with the spices. My husband loved it!

Great recipe and I love that it makes 3 loaves. I did however only cook for 48 Min. as opposed to 1 hr. and the bread turned out Perfect. Will make again!

This bread was fantastic. I followed the instructions and measurements to the letter and 3 perfect loaves of pumpkin bread were created. My family loves this recipe and it's so easy. I'm off to the market for more cans of pumpkin.

I was so excited to make this recipe for an annual brunch...what a disappointment! I followed the directions, changing only the spices (I'm not a clove fan), and my bread turned out VERY gummy. Even after baking it for SEVERAL extra minutes, it was a disaster. I gave it two stars instead of one despite thae fact that "bread" went into the garbage, because I did taste it and the flavor was great. Too bad!

Very Yummy! I used 3 heaping tablespoons of Pumpkin Pie Spice instead of the spices it calls for and it turned out fine. It was soo moist!

I added nuts and raisins to mine just because I like that and I substituted pumpkin pie spice for all the spices because I didn't have nutmeg. This was excellent.

I was looking for a Pumpkin Bread recipe that tasted like the bread my mom used to make, and I found it! I added 1 c. of chopped walnuts to half of the batter, just because I like them in my bread. This is a great recipe and one that I will bake often.

This recipe is AWESOME!!! Just a few simple tweaks and they are super healthy and yummy! I use fresh pumpkin puree and fresh apple sauce in place of the oil. I also use half whole wheat flour, only 2 1/2 cups organic sugar, a full 2 tsp of cinnamon, 1 tsp ground ginger, and 4 tbsp ground flaxseed. My kids beg for these in their lunchboxes!!! Thanks!

Great although 3 loaves is a bit much for us! I gave one loaf to a friend, froze one, and kept one for us. Next time I will reduce the recipe.

My husband says "delicious!" This was actually my first time making pumpkin bread, and it turned out awesome! Next time I'll try replacing some of the oil with unsweetened applesauce like many others have suggested. Will make again!

Awesome recipe. I used 4 teaspoons of pumpkin pie spice instead of the cinn/nutmeg/clove. I also added a bag of cinnamon chips . . . yummy!
