INGREDIENTS
4 eggs
1 2/3 cups sugar
1 cup vegetable oil
1 (15 ounce) can solid pack pumpkin
2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
ICING:
1 (3 ounce) package cream cheese, softened
2 cups confectioners' sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1 tablespoon milk

DIRECTIONS
In a mixing bowl, beat eggs, sugar, oil and pumpkin. Combine flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well. Pour into an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees F for 25-30 minutes. Cool completely.
For icing, beat cream cheese, sugar, butter and vanilla in a small mixing bowl. Add enough of the milk to achieve desired spreading consistency. Spread over bars.

Everyone seemed to be a little disappointed about how "cake-like" this recipe turned out, so I made a few adjustments: I used 3 eggs instead of 4, brown sugar instead of white, 1/2 tsp of baking soda instead of 1 tsp, and added a few shakes of ground cloves and nutmeg (I couldn't resist!!). I baked for 28 mins in a 9x13 pan. They are just now cooling on my counter and I took a smidgen from the corner - VERY moist, dense, and SOOOO tasty. I can't WAIT to put the cream cheese icing on top!!

They are kind of cake-like, but I didn't think of that as a bad thing. I thought these bars had the perfect balance of pumpkin, spices, and sugar.

These were good. Be ready for something that resembles a cake though, with a yummy creamcheese frosting. The cake was not overly sweet, it was more of a spice flavor. Some people looooved these bars, and I thought they were pretty good.

These are very good. I was plesantly surprised. They were cake like, but they were very moist and the frosting is very good. Everyone loved these, and I'll definetly make them again. They're very easy to make.

These are really moist and yummy! I added a teaspoon of pumpkin pie spice to the cake mix, plus I sprinkled some ground cloves on top of the bars after they had been frosted in order to make them a little spicier.

This was fantastic! I do a ton of baking and have my family memebers each rate new recipes when I try them. This recipe was voted the very favorite by every single family member! Will definately be making this again and again! Thank you!
