I bake all the time and this is the best muffin recipe that I have tried....although the pumpkin is very obvious my 8 yr old thought they were just very yummy apple muffins...have past this recipe on to friends already! Great muffin for the season!

Very good! I made these using fresh pumpkin from my garden and it turned out yummy. The streusel didn't work for me as it was a little warm and it got all melty before I put it on the muffins.

These muffins were wonderful!! I made them for my 1 year old picky eater and she loved them!! I will be making these again. I normally make changes to recipes but this one was perfect as is...Thank you for such a delightful treat =)

I didn't get to try these as my coworkers ate them all, but everyone said only good things about these muffins. I left the skin on the apple because I'm lazy and everyone can use more fiber, and the texture was fine.

These turned out wonderfully! I made a few changes... I only used 1 cup sugar and used shredded apple and a mashed banana in place of the oil. I also used 1/2 whole wheat and 1/2 regular flour. I made 12 big muffins.

Wow a person could have a very successful bakery with this recipe. I could start every morning with 2 of these muffins and a cup of hazelnut coffee. Life is good.

These were really good and super moist. Will definitely make again. I did what a prior reviewer did and added 1/2 cup brown sugar and only 1 1/2 cup of white sugar

This is a really good base recipe. I made a few changes... I missread the recipe to begin with and only used 1 cup of sugar and I am glad I did! I added 1/2 tsp additional of the following nutmeg, cloves, cinnamon, ginger, all spice and lemon juice. I subed the oil for applesauce and added a tsp of applesauce to the crumble as well as a tsp of cinnamon. I made a glaze to drizzle on top during the last five minutes of cooking out of 2 tbs half/half, 1 C confectionars sugar, 1 tbs butter, 1 tbs lemon juice and 1 tbs of applesauce. The glaze really makes this recipe POP! Thanks for sharing.

This recipe is delicious, and I agree with everyone, 2 cups of sugar would be too much. I doubled the recipe so I kept it at 2 cups of white sugar, and mixed in around 1/2 cup of brown sugar. Only when mixing the brown sugar doesn't appear to blend in very well, and you can only mix by hand, and not too much, so it does create a dilemmna. Don't base how much sugar you put in on the taste of the batter. The batter tasted overly sweet but the result was just right. I found the pumpkin taste and the spices weren't very prominent, and I like the spices so next time I'd put in 2 tsps of cinnamon, 3/4 tsp nutmeg, 3/2 tsp allspice, and some more pumpkin. I also pulled out the muffins/loaf around 20 minutes in and sprinkled with more streusel.

Great recipie i just altered it a bit. Too sweet so I used 11/2 C sugar. Personally i will use 1 cup next time and used 1/4 C applesauce with 1/8th C plain yogurt and 1/8th C oil to replace the 1/2 C oil. I also subbed out 1/2 C of reg flour for quick oats for a little nutrition. Excellent. I also added walnuts to the strussel. Yummy. Definetly will make again.

The kids loved these..they were tasty and moist. I changed a few things after reading comments: reduced sugar to 1 cup sugar + 1/2 cup brown sugar; instead of 2 eggs = 1/2 cup egg beaters; instead of pumpkin spice I used 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp allspice and 1 tsp vanilla.

I don't like muffins. Never have. Never thought I'd find a recipe that would make me change my mind. These are SOOO good. Straight up - no changes needed to this recipe. They are moist and light and freeze amazingly well - just pop them in the microwave for 30 seconds and they're steaming and fresh. I found them when I was pregnant, and they were one of the few things I craved... Update - this is still my absolute favorite recipe on the site. I make them ALL THE TIME.

Really awesome muffins. So easy to make. My only warning is to watch how long you bake them. 35 minutes is way too long. 25 minutes was perfect for my oven. They are a real tasty treat!
