My kids LOVE these muffins! I did make a few changes just to be healthier, I used whole wheat flour instead of white and applesauce instead of oil. I also made a double batch and used a whole can of pumpkin puree. Since I was out of pumpkin pie spice, I just used ground cinnamon, nutmeg and ginger. My kids take these to school for snacks and have them for breakfast and my 15 yr old daughter even shared some with a classmate who loved them, too! I just made the second batch tonight, and the kids wanted one for dessert as soon as dinner was over, and my kids RARELY like things that are "healthy" for them. This recipe is a keeper!

Really good! I agree with others that the streusel might not be needed since they're pretty sweet to begin with. I would sub applesauce for the oil next time, possibly cut back on the sugar in the muffin mix & maybe even add some chopped nuts. I misread the directions & used the whole can of pumpkin instead of just one cup & thought they turned out great- maybe more pumpkiny than they were supposed to be, I don't know!

I gave this 3 stars only because I used another muffin recipe(country pumpkin muffins) but I used the Streusal topping part on the other recipe and it was great!!! I made these for a Thanksgiving brunch we had and the family absolutely loved them!!! The only reason I didn't just stick to this recipe is because I'm not a big fan of the apple and pumpkin taste together but the Streusal topping part sounded so yummy!

Delicious muffin, I didn't change anything. They were just out of the oven when my daughter came home from school and she and I tried them for the first time. She immediately had a second. Thanks for a good recipe. By the way, since this only uses 1/2 can of pumpkin you could either make a double batch of muffins and freeze some, or try the "Pumpkin Cookies V" like I just did, with a caramel icing, wonderful!

I made this in a 9X13 pan as a coffee cake and baked it for 45 minutes and it came out great! I used half oil and half applesauce and had to use a little more butter for the streusel topping in order get all of the ingredients mixed in and it came out amazing! I brought it to work for my breakfast day and everyone loved it! Next time I'll try using all applesauce and no oil, egg whites, and whole wheat flour and/or oatmeal (I didn't want to make too many changes the first time I made the recipe!) to make it a little healthier. I might also try foregoing the streusel topping and just sprinkling cinnamon sugar or powdered sugar on top instead. All in all a great recipe!

I made the recipe as written. They turned out great. I loved the apples even though their flavor was very mild. I mixed in candied pecans and sprinkled some on top too.

It seems this recipe is great but maybe I did something wrong because my muffins came out small and very dense. I did reduce some of the sugar and used half brown and half white sugar, added chopped pecans and brown sugar in the topping. The taste was good but the texture isn't what I was expecting. I might have over-mixed the batter and that's what made them chewy instead of fluffy. Better luck next time!

These muffins are wonderful! I used fresh pumpkin that I baked earlier in the day, and the muffins had a very healthy taste to them (although I'm sure they aren't). The recipe made 22 medium sized muffins.

I thought these were okay. I made them per the instructions and tasted a little bland and on the dry side. I do like having the apple chuncks in there and my daughter really enjoyed them. Will make again and try making a few tweeks to the recipe to our liking.

Make sure to fill the muffin cups to the top; these don't rise very much. Delicious, very moist. I skipped the steusel because I ran out of sugar. I doubled the batch & had to substitute half of the white sugar for light brown. (Who keeps four cups of sugar around?! Haha. Beginner's mistake.) Still came out great.
