I must be from a different part of the country, because I would call this recipe "Pressure-Cooked Pot Roast". I was looking for a beef stew recipe, found this one and realized, after making it with stew meat, that it was actually pot roast. Not too quick on my part, but the recipe is really good when made with stew meat. After the veggies are cooked, mix in the warm, cooked stew meat and you have a great stew. Kudos!!

I'm fairly new to the pressure cooker and this recipe was easy, but long. You have to account for the time to heat up to pressure. Also, I will leave out the bay leaves next time. Even my kids cleaned their plates and raved about the veggies.

This is exactly how I make beef stew. I always use my pressure cooker ... even to prep the beef for vegetable soup. There's no better way than this. The meat is fork tender, the veggies are perfect and the gravy is the best ever. I think slow cookers are over-rated. Give me my pressure cooker any old day. I'm not one to have things ready to go before I leave for work. But with a pressure cooker I can have the same meal on the table in less than 40 minutes. Excellent!
