Ingredients

  • 1 clove garlic, minced
  • 2 teaspoons olive oil
  • 1 (16 ounce) can garbanzo beans (chickpeas), drained and rinsed
  • 1 tomato, chopped
  • 1/3 onion, chopped
  • 1 teaspoon cider vinegar (optional)
  • 1/2 teaspoon salt, or to taste
  • 1 pinch ground black pepper
  • 1/2 lemon, sliced

Directions

  1. Mix the garlic and olive oil in a small microwave-safe bowl. Cook 15 seconds in the microwave on High, or just until warm.
  2. In a large bowl, toss together the garlic and olive oil, garbanzo beans, tomato, onion, and vinegar. Season with salt and pepper, and garnish with lemon slices. Cover and chill until serving.
