"This hearty meal-in-one dish comes from Reta Christensen of New Denmark, New Brunswick, who often takes it to potluck suppers at the community seniors' group she and husband Henning helped organize. 'It's delicious for sauerkraut lovers and easy to double for a larger crowd,' she notes."

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (28 ounce) can tomatoes with liquid, cut up
  • 1 (16 ounce) can sauerkraut, drained and rinsed
  • 1 1/2 cups cooked rice
  • 1 medium green pepper, chopped

Directions

  1. In a skillet, brown the ground beef and onion; drain. Add remaining ingredients; transfer to a 2-qt. baking dish. Cover and bake at 350 degrees F for 1 hour.
