This was good, but I made a few changes and next time I will make some additional changes. I followed other's suggestions and increased the number of eggs to 6 and added garlic and additional spices -- dried oregano and a multi-purpose seasoning blend. I did not bake the frittata, but cooked it on the stovetop and then finished it under the broiler. I also added some crumbled bacon under the cheese.
The next time I make it, I will probably use frozen shredded hash browns. The fresh potatoes did not get as crispy as I would have liked, maybe too much moisture? I will also add the onions either before or with the potatoes rather than after. All in all, pretty tasty.
