Like others have mentioned, my potatoes came out undercooked even with extra time in the oven.
I didn't have all the ingredients, so my recipe came out like this:
I used canned black beans with jalapenos,
3 flour tortillas torn in half,
green onion boiled with 4 tomatillos,
all the other spices listed except cilantro,
I added garlic powder, jarred diced garlic, and black pepper.
I added salt to the pureed tomatillos and it tasted sour/sweet.
I layered the tortillas and mixed some tomatillo sauce with the potato/bean/cheese mix in between.
The first night I made it, I didn't like the taste of the sour tomatillo.
Leftovers were addicting though!!! I usually end up liking the taste of leftovers after all the flavors have marinated with eachother. I could not stop eating this, it was sooo good!!! The next day I added some routisserie chicken for more protein.
