This recipe is GREAT!!! I made it for my husband, 3yr old, and my father-in-law and they loved it! Each had 2 servings! Thank you for sharing!

I was excited to try this new recipe. However, like other reviews; we found it a bit bland. I substituted the Mexi-corn for a small can of diced green chilies. I think the potatoes soak up too much of the flavor. Next time I might bake the 'meat loaf' first, then towards then take it out and then add the potatoes on top. Like the idea of this dish just wish it would've been a bit more flavorful. Leftovers tonight though! maybe add some gravy on top?

I'd rate this 3.5 stars if I could. With some seasoning of the potatoes and meat, the flavor was better. But overall, this was just an okay recipe for me. Decent to make once, but I won't be adding it to my recipe book. I'll just stick with shepherd's pie, as this is a similar take.

I am using my own leftover meatloaf; just sliced and laid in baking dish. Added can corn niblets, green onions and shredded cheddar to homemade leftover mashed potatoes and spread over top. Will baked covered for about 30 minutes to warm up (it all had been refrigerated) and then I'll uncover for another 15 minutes. Should be great. Super idea!!! Thanks

A great recipe, similar to shepherd's pie but with a little more pizzazz. I used taco seasoning instead of chili powder, and didn't have Mexicorn, so used frozen corn and a small can of green chilis. Next time I would use chili beans instead of kidney, as someone suggested.

I made this a few nights ago, after trying to find some way to use up some ground beef that I had. We love meatloaf around here and my husband raved about this one!

This was not my favorite dish, but that may be my own fault. I only had 1 lb. of ground beef instead of 1 1/2, but still used the same amounts of everything else. The chili powder was TOO MUCH for this much meat. I think I would have preferred it seasoned with taco seasoning instead. That was really the only thing that ruined it for me, so I'm giving it 4 stars.

Very good and easy! If you have a pot of leftover chili you can use that and it's ready in no time!
