A great recipe, similar to shepherd's pie but with a little more pizzazz. I used taco seasoning instead of chili powder, and didn't have Mexicorn, so used frozen corn and a small can of green chilis. Next time I would use chili beans instead of kidney, as someone suggested.

I made this a few nights ago, after trying to find some way to use up some ground beef that I had. We love meatloaf around here and my husband raved about this one!

This was not my favorite dish, but that may be my own fault. I only had 1 lb. of ground beef instead of 1 1/2, but still used the same amounts of everything else. The chili powder was TOO MUCH for this much meat. I think I would have preferred it seasoned with taco seasoning instead. That was really the only thing that ruined it for me, so I'm giving it 4 stars.

Very good and easy! If you have a pot of leftover chili you can use that and it's ready in no time!

I thought overall this was a good dish. I'm not one to be too creative, I usually just follow the recipe. It could have used something else maybe another spice or something in the potato mixture. Everyone enjoyed it though!

The mashed potato topping with veggies and cheese was very good, but am at a bit of a loss, as to how it goes with meatloaf. If I do this recipe again, I will try a different meatloaf recipe and serve the mashed potatoes and veggies separately.

Loved the concept. My meatloaf turned out a little dry and bland - I should know better than to use a low fat content beef. I definetely plan to make again!! This was a great comfort food!

I browned 1 pound of ground beef in a frying pan so I could cook a whole large onion and three stalks of celery with it. I threw black beans in with the meat once it was cooked. I nuked leftover mashed potatoes and mixed in cream corn and the cheese. It's delicious! A south western flavoured shepard's pie. I'm going to double my mashed potatoes often to use this recipe. Thanks for sharing!

Big fan of this recipe! Adds a little something something to the traditional meatloaf recipe. Also, I added a little bit of garlic to the meat, and some cilantro to the topping...a great addition!

Delicious!! Only thing I would do different next time (and there will be many next times) is to add more seasoning to the meatloaf. Otherwise, this was a huge hit. Wonderful meal by itself.

This is the best meatloaf recipe! I used frozen pepper/onion mix mixed with the meat because I didn't have any fresh onions. My kids don't usually eat kidney beans but the y loved this. Will be making this regularly!

My family loved it! I did substitute ranch style beans as some suggested. I also used potato flakes (prepared per directions) to cut down on the prep time. It was good that way if time is an issue, but I will make it with homemade mashed potato next time.

Very Good!!! My family really liked it. I only made minor changes, like using chili beans instead of kidney beans and putting some diced tomatoes into the meatloaf. Nice and Filling!
