INGREDIENTS
3/4 cup diced onion
1/3 cup saltine crumbs
1 egg
3 tablespoons milk
1 tablespoon chili powder
1/2 teaspoon salt
1 1/2 pounds ground beef
TOPPING:
3 cups hot mashed potatoes (prepared with milk and butter)
1 (11 ounce) can Mexicorn, drained
1 (15.5 ounce) can kidney beans, rinsed and drained
1/4 cup thinly sliced green onions
1 cup shredded Cheddar or taco cheese, divided

DIRECTIONS
Combine the first six ingredients; crumble beef over mixture and mix well. Press into an ungreased 9-in. square baking pan. Bake at 375 degrees F for 25 minutes or until no longer pink; drain.
Combine the potatoes, corn, beans, onions and 1/2 cup of cheese; spread over meat loaf. Sprinkle with the remaining cheese. Bake 15 minutes longer or until the potato layer is lightly browned and heated through.

This is simply great. My husband loved it and so did I. It is great for dividing up and taking in his lunch box for work. One of the best recipes on this website. Contratulations Glenn.

Big fan of this recipe! Adds a little something something to the traditional meatloaf recipe. Also, I added a little bit of garlic to the meat, and some cilantro to the topping...a great addition!

Delicious!! Only thing I would do different next time (and there will be many next times) is to add more seasoning to the meatloaf. Otherwise, this was a huge hit. Wonderful meal by itself.

This is the best meatloaf recipe! I used frozen pepper/onion mix mixed with the meat because I didn't have any fresh onions. My kids don't usually eat kidney beans but the y loved this. Will be making this regularly!

My family loved it! I did substitute ranch style beans as some suggested. I also used potato flakes (prepared per directions) to cut down on the prep time. It was good that way if time is an issue, but I will make it with homemade mashed potato next time.

Very Good!!! My family really liked it. I only made minor changes, like using chili beans instead of kidney beans and putting some diced tomatoes into the meatloaf. Nice and Filling!

This was not my favorite dish, but that may be my own fault. I only had 1 lb. of ground beef instead of 1 1/2, but still used the same amounts of everything else. The chili powder was TOO MUCH for this much meat. I think I would have preferred it seasoned with taco seasoning instead. That was really the only thing that ruined it for me, so I'm giving it 4 stars.

I thought overall this was a good dish. I'm not one to be too creative, I usually just follow the recipe. It could have used something else maybe another spice or something in the potato mixture. Everyone enjoyed it though!
