Potato Rounds

INGREDIENTS

  • 2 large baking potatoes
  • 6 slices bacon
  • 1 cup shredded Cheddar cheese

DIRECTIONS

  1. Place the potatoes in a large pot with enough water to cover. Bring to a boil, and cook until tender when pierced with a fork, about 20 minutes. Drain, and cool.
  2. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet. Cook bacon in a large skillet over medium-high heat until crisp. Drain, cool, and crumble.
  3. Slice the potatoes into 1/4 inch rounds, and arrange them in a single layer on the baking sheet. Sprinkle a few crumbles of bacon onto each round, then top with some shredded Cheddar cheese.
  4. Bake for 15 minutes in the preheated oven, or until cheese is melted and lightly browned.

Really tasty! Basically like potato skins. I like to cook the potatoes for a bit untopped until they start to get a little brown, then take them out and add the cheese and bacon. Don't forget to garnish with sour cream!

I dipped the potatoes in a garlic salt/butter mixture, added green onions and more cheese and bacon, topped off with a dollop of sour cream. Without these additions I think this recipe would have been a little bland and dry. Nice idea, but I missed the potato skin taste, you just don’t get much of that taste prepared this way.

This was good, but definitely needs a little help. I brushed the potatoes with garlic butter first. They needed a lot of salt - I would suggest salting them before you put the bacon and cheese on. Might also be good with new potatoes. I was worried that the baking potatoes were going to fall apart, but they didn't.
