I really liked these and my kids did too (I added the cheddar). I boiled my potatoes while I did the onions etc (no left over mashed) and it all worked out nicely. I loved the onions in it, great flavour! A bit of work but happy in the end, nice and light.

Yummy...reminded us of a great breakfast food. Want to try it with sausage in it. Light and yummy. I used about 1/2 cup of reduced fat sharp cheddar cheese.

I like this recipe a lot because I love mashed potatoes but can find them boring sometimes. I love the light texture and the extra flavor from the onions and the cheese. I plan on making this with diced black forest ham or smoked ham for a one-dish meal.

This was excellent, with or without cheese. It's also a good way to use up extra onion.
