Ingredients

  • 1 small onion, chopped
  • 2 tablespoons butter or margarine
  • 1/2 cup milk
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups mashed potatoes (prepared with milk and butter)
  • 2 eggs, separated
  • 1 cup shredded Cheddar cheese (optional)

Directions

  1. In a skillet, saute onion in butter until tender. Stir in milk, mustard, salt and pepper; bring to a boil. Remove from the heat; stir in potatoes and mix well. Stir in egg yolks until smooth. Cool at room temperature for 15 minutes. Stir in the cheese if desired.
  2. In a small mixing bowl, beat egg whites until soft peaks form. Fold into the potato mixture. Spoon into a greased 1-qt. baking dish.
  3. Bake at 350 degrees for 40-45 minutes or until puffed and lightly browned. Yield: 6 servings.
